WHAT YOU’LL NEED

750 g beef fillet
2 tablespoon olive oil
2 sheets puff pastry
1 egg beaten
1 egg yolk beaten
200 g mushrooms, very finely chopped
1 large sprig thyme
40 g butter
80 mL dry white wine
10 slices prosciutto
1 egg yolk, beaten
STEP 1

Season the beef well with salt and pepper. Heat a frying pan over a medium high heat. Massage one teaspoon of the olive oil into the beef, then sear the fillet on all sides until it’s brown all over. Ensure both the ends are browned as well. Place the meat on a plate to cool completely while you prepare the rest of the dish.

STEP 2

Place one pastry sheet on a clean work surface. Brush one edge with the beaten egg then place another sheet slightly overlapping and gently press together to seal. You should have one large long rectangle.


STEP 3

Meanwhile to make the mushroom filling heat the remaining olive oil in a large pan and fry the mushrooms on a medium heat with the thyme, for about 10 minutes. Keep stirring often until they’re soft and there’s barely any moisture left. Add the wine and a little salt and pepper and continue cooking until all the wine has absorbed, roughly 10 minutes. Place the mushrooms in a bowl, remove the thyme and allow them to cool completely.

STEP 4

Place a large piece of plastic wrap on your work surface. Lay the prosciutto slices, slightly overlapping, in a row over the centre of the plastic wrap. Spread half the mushrooms over the prosciutto. Place the beef fillet on top of the mushrooms, then spread the remaining mushrooms on top. Using the plastic wrap as a guide, roll the prosciutto around the beef fillet. Securely wrap up the plastic wrap and pop it into the fridge for 30 minutes to rest.

STEP 5

Preheat the oven to 200°C. Lightly grease a baking tray with oil. Unwrap the beef from the plastic wrap and place in the centre of the pastry. Roll the beef in the pastry, folding in the ends. Trim any overhanging pastry but ensure the beef is completely enclosed. Place the beef on the prepared tray with the seam facing down. Brush all over with the beaten egg yolk and, using the back of a knife, mark the beef wellington with long diagonal lines taking care not to cut into the pastry.

STEP 6

Pop the beef wellington into the oven and cook until golden and crisp on the outside: 20 minutes for rare, 30 minutes for medium. Allow the beef wellington to stand for at least 10 minutes before slicing and serving

Everyone who knows the basics about this rivalry and the sport is aware Robles' touch wasn't intentional but a product of losing his balance bc he touched the 9th hurdle. 
Robles was disqualified rightfully but portraying him as a cheater is stupid.
