So I would stick with the red miso because it has so much more flavor than white and just use less salt. I would also cut back on the vinegar and lemon juice (cheese should not smell or taste like vinegar, but black vinegar could add a nice hit of umami plus some tartness) and add some other flavors like garlic powder, onion powder, paprika and dijon mustard to give more depth of flavor. I like using lactic acid to get that cheesy tartness, so would add a good hit of that as well. Taste the marinade and see how it goes. Not a huge fan of tempeh, but am going to give this a try with modifications just for something new that could turn out pretty cool.

So the tempeh was still a bit bitter to me but super umami packed. I went for it and made traditional pesto with it in place of Parmesan and I’ll be damned if it isn’t fabulous!!  Even my husband said it tasted like the real deal!  I did take your advice and decreased the salt and used white miso. 

You’d fool anyone with this pesto. 

To grate it I put it all into my food processor with knife blade and pulverized it into fine crumbles.

OK, so I made this last night with mixed results. I used a different brand of tempeh than the one Merle used and brown miso paste, and it didn’t really hold together for the purpose of grating it like parmesan. I got some grated “cheese,” but mostly it fell apart in larger clumps. On the good side, it tasted pretty good, way better than I would expect for tempeh. Not really like parm, but in that ballpark.

I honestly love parm. It's low lactose, high protein, light and delicious taste. But to find something even healthier AND vegan would be so so helpful for my dietary issues. This is so exciting

Love this video! Always surprises me that it takes so long to boil an electric kettle in the US (in the UK the electricity voltage works different and it takes like 2 mins max to boil a kettle). Must make it harder to chug tea all day every day.

Are electric jug/kettles not that common in the USA? I live in NZ and for my whole life (I'm 34) everyone I know has had a kettle in their kitchen haha. I saw something about people microwaving cups of water for a tea which is wild to me.
Definitely keen to try this recipe.

Okay, so I watched the original video and my guess is that he used Kosher salt - the Diamond Crystal kind. Diamond Crystal Kosher salt (not all Kosher salt is the same) has about half the amount of sodium as table salt, which  looks like what was used here. Most, if not all, chefs use kosher salt as the main salt in their cooking. 3Tbsp kosher salt = ~1.5Tbsp table salt. Although, tbf, he should really say that in the video or recipe.

Also, that TJs tempeh is, I’ll be kind here, not good taste-wise. Get some Franklin Farms regular tempeh and compare them. You’ll be wondering why you’ve been eating this trash tempeh (other than convenience and price). May not make a difference for this recipe, since you are marinating the hell out of it. Thank you for taking the time to make this!
