You should try smoking it instead of putting it in the oven next time since you have that Traeger. That’s mostly what I’ve been using my Traeger for lately. It doesn’t get much better than a smoked reverse-seared steak, in my opinion. It’s so good.

I do same as you but approx 200 degrees in oven to 115 internal, let it rest, then sear in tallow (or its own fat if appropriate) to 122 fahrenheit and cut it at 125. Becomes a bit better in terms of less grey band in the end.

Resting after oven and before sear really improved texture imo if someone wants to try it out

Just had all my upper teeth removed so this is torture knowing dentures don't stand a chance against a thick cut of meat like that, but i love to see these cooking methods anyway πŸ˜…πŸ‘πŸΌ

I find that with my oven, 225F is low enough that the steak's internal temp barely goes up more than 2 or 3F after pulling it, so I up it to about 130F and it it gets to 133F after resting for 15 minutes before searing, so be it.  Gives a perfect steak every time.

I've been cooking mine the same way and pulling it out of the oven at the same temp. However, I finish mine in a cast iron with butter, loads of garlic, and rosemary.
