Gooey Lemon Custard Cake ~

Inspired by British pudding cake with an airy cake on top and a lemon custard base !

What went in
3 large eggs ( yolk and whites separated )
1 tbsp butter at room temperature
1 cup + 2 tbsp granulated sugar
1/4 tsp salt
3 tbsps APF
Grated lemon zest
Lemon juice (2-3 small lemon)
1 cup whole milk
Powdered sugar for dusting
Preheat oven to 350F. Grease or line a 7x 7 baking dish
Beat the egg whites till stiff peaks
Combine sugar, butter and salt by your hands Untill texture is like damp sand
Start adding remaining ingredients . Flour, egg yolks, lemon zest and lemon juice in same order. Gently mix
Add milk and combine well.
Fold in beaten egg whites. Pour in baking dish
Bake. Let cool completely for minimum 30 mins.
Dust with icing sugar. Serve with ice-cream, nuts or fruits
