I feel like "bias cut" could be a term that came from fashion/fabric industry. Most fabrics are basically constructed in a grid-like weave where the warp (up and down) has very little stretch, the weft (side to side) might have some, and the bias (45° diagonal) has the most stretch. I've never heard it used in the kitchen but it made immediate sense to me (also im a lay person so i dont use fancy kitchen trrms anyway)
