The reason is far simpler. Thor's every move with Thanos was to go for the head. Stormbreaker can do the deed, Mjolnier can't.

stormbreaker doesnt have that spell odin casted on it that prevents anyone unworthy from using it like mjolnir

The reason has nothing to do with them not being strong enough to use Stormbreaker. It has to do with the enchantment of "being worthy." Thor was pretty sure that at sometime during the fight Captain America might lose hold of Stormbreaker. This would leave an incredibly strong weapon in the hands of whoever picked Stormbreaker up. On the other hand, if Mjollnir was dropped, no other person, unless they were worthy could pick him up. Stormbreaker could be handled by anyone, which is why Thanos almost killed Thor with his own weapon. That wouldn't have happened if it had been Mjollnir.

Stormbreaker doesn't have the enchantment of Mjolnir, it doesn't give Cap Thor's powers. So once the enchantments time limit wears out, Cap would be left as just his super soldier self, wich is not strong enough to wield Stormbreaker

As said by the dwarf who created it "it's a kings weapon", there was a reason why the mould was unused, until a wielder was suitable.

As Eitri said, Stormbreaker is a KING'S weapon. Cap is MANY THINGS, but a King is not one of them. While he's worthy to lift and hold it of course, using it correctly is another matter.

I believe this is wrong and the reason is because stormbreaker is sentient as shown in Thor love and thunder. Stormbreaker would get mad as Thor uses mjolnir instead of him

Thor was probably worried that at in point in the battle he himself might become "unworthy" and be left without a weapon. The enchantment was only on Mjolnir. But on a side note...that enchantment should be void now that Odin is dead...or is he? But on a second side note....Jane actually "gained the power of Thor". Why didn't Cap?
