My R6 is similar : if needed I go to Iso 10.000 or 12.800 as well. On my first Rebel (500D), Iso 800 was the maximum for me !

I prefer the 1st option; the 2nd one looks more like an AI upscale/painted look. I think using a slider and stopping before it looks unnatural would have yielded a better result. With that said, I've watched some of your other shorts which were very informative

What setting did you use for DeNoise? I usually top out at 25. It feels like I start to lose detail after that point.
