In all my years of cooking, this is one of my personal favorite comfort foods of all time, meaning, rice noodles with this creamy, savory sauce. I like to garnish mine with chopped roasted salted peanuts, chopped scallions, fresh cilantro, lime juice and if I happen to have any, some of that ginger that is so often served with sushi, the pickled ginger. There is hardly anything in this world more comforting than a nice bowl of that stuff, with all my chosen garnishes.
