The stress, loss, fear, grief, isolation, trauma and sorrow aged him not only through the regular physical way like we have in the real world but also through the force. It’s this reason why sith often appear way older than they are and why they have physical impairments like ashy skin and grey hair due to dark and unbalanced emotions. This, plus Tattooine’s twin suns and desert environment are a good enough explanation for his physical appearance appearing more aged.

I mean, Alec McGuiness was 62 when he played Obi-Wan, which is only five years older than the character is supposed to be, so I feel like people are kind of blowing this out of the water. Granted, Ewan McGregor isn't far away from 57 now and looks far better than Obi-Wan does in A New Hope, but people just age differently and it's not inconceivable that the man responsible for brutalizing his best friend and then going to live in a desert with two suns for nearly twenty years would look little haggard.

He watched a person he cares about die during child birth and now he lives in an overbearing empire. 

It’s no wonder he aged so drastically.

An explanation I heard is he heavily used the Force to conceal his whereabouts a side effect of that was rapid aging.

Smoking was allowed everywhere. Whenever he went to the cantina, there was so much smoke everywhere. 2nd hand smoke is a killer.

Ngl Luke and Leia aged pretty roughly too in The Force Awakens. They’re supposed to be like 53 but they look a lot older

I never understood how people thought obi-won aged too much between episode 3 and 4. I guess everyone really lives a life indoors and of pure luxury because when you see farmers or construction workers they all look older than what they are due to exposure. Also 19 years isn't a short amount of time. Like does everyone think they don't change in nearly 2 decades?

Both Owen and Beru have also aged so badly. Plus, Luke looks 10 years older than Leia despite that they're both 19 years old.

Oh, I know the answer, because this role was played by two different actors: Alec Guinness, who lived through two world wars and was 62 when they filmed the og trilogy and Ian Mcgregor, who was 32 when they were filming Revenge of the Sith and 52 when they were making the series.
