Why we chose UUID primary key? Because in clustered environment, multiple pods can write to same database. UUID clashing is almost impossible whereas int primary key can clash easily.

But the UUID is like a VARCHAR data type right? Will you not face an issue if you are creating indexes?

This doesn't work for non-technical clients, you need to ask specific types of questions in laymen's terms and analyze the information gathered and then create a technical design document and RDBMS conceptual model diagram based on your analysis...
