( Makes 30 medium samosas)
Ingredients
300g Chicken Breast
250g Peeled Potatoes
5 to 6 sprigs of curry leaves
2 medium onions
9-10 green chillies ( Adding this much as the heat will be absorbed by the potatoes - you can adjust accordingly )
2 Black Pepper & Pinch of Turmeric Powder
Method
Boil the& potatoes with 2 small tsps of salt, pinch of turmeric & 1 tsp crushed black pepper ( Remove chicken around 15 mins & continue to boil potatoes until soft & tender )
Shred the chicken & roughly mash the potatoes.
In a chopper, finely chop curry leaves,chillies&onion
Heat oil, saute the onion mix on med heat for 10 mins until some bits are light brown. Then add a pinch of salt, little more oil and the shredded chicken. Fry the chicken bits for a few mins before adding the potato & extra crushed black pepper. You can add a pinch of garam masala if you like ( Taste and adjust seasoning as per your liking )
Let the filling cool down before filling into samosas.
Deep fry or air fry and enjoy with chutney or sauce of choice!
