Ingredients:
1/2 cup heavy cream
1/4 cup sugar
a drop of ube flavoring
1/4 cup butter
2 cans evaporated milk
1 dozen eggs
2 bags grated purple yam
2 home made or bought graham crust
2 cans condensed milk
Melt butter in a pan in medium heat. Add in sugar. When sugar is melted add the 2 bags of grated purple yam in low heat and cook for 10 minutes then add the condensed milk. Add a cup of evaporated milk and a drop of ube/purple yam flavoring. Mix and let it cook for 25-30 minutes. Add the mystery ingredient. Put the ube mixture in graham crust. Separate egg yolks from whites. Mix 1/4 cup of evaporated milk, 1/2 cup heavy cream and 1 can condensed milk. Mix it and strain before putting above ube mixture in pie crust. Preheat oven to 350F for 5-10 minutes. Steam bake in the oven for 60 minutes. Let the Purple Yam Leche Flan pie cool down. Enjoy and serve with love to your family.
