Full recipe :

Ingredients:
• 1 cup besan (gram flour)
• 1.5 cups water
• 1 tbsp oil
• ½ tsp mustard seeds
• ½ tsp cumin seeds
• 1 pinch hing (asafoetida)
• 1 tsp ginger-green chili paste
• ½ tsp turmeric powder
• ½ tsp red chili powder
• Salt to taste
• ½ tsp sugar (optional)
• 1 tbsp lemon juice (optional)
• 1 tbsp finely chopped coriander leaves
• 2 tbsp grated coconut (optional, for garnish)

Instructions:
1. Prepare the Batter:
• In a bowl, mix besan, water, turmeric, red chili powder, salt, sugar (if using), and lemon juice. Whisk well to ensure there are no lumps.
2. Cook the Besan Mixture:
• Heat oil in a pan. Add mustard seeds, cumin seeds, and hing. Let them splutter.
• Add ginger-green chili paste and sauté for a few seconds.
• Lower the flame and slowly pour the besan mixture into the pan while stirring continuously.
• Cook on a low flame, stirring constantly, until the mixture thickens and leaves the sides of the pan (this takes about 5-7 minutes).
3. Spread and Set:
• Quickly transfer the mixture onto a greased plate or back of a steel plate (thali).
• Spread it evenly using a spatula and let it cool for a few minutes.
4. Cut into Pieces:
• Once set, cut into squares or diamond shapes.
5. Garnish and Serve:
• Sprinkle chopped coriander and grated coconut on top.
• Serve with Tea
