🌿Mughlai Egg Curry 🥚🍛
INGREDIENTS :
( For Green paste )
Onion - 2 Medium size
Greenchilli - 8
Garlic - 10
Ginger - 2 inch
Cashews - 10
Coriander Leaves - 1 cup
Water -1/4 th cup
(Grind into smooth paste )
(In Kadai)
Oil - 3 to 4 tbsp
Whole spices - (1 Bayleaf, 2 cloves , 2 cardamoms, 1 inch cinnamon stick , 1/2 tsp cuminseeds, 1/2 tsp fennel seeds )
Salt - 1 and 1/2 tsp
Turmeric - 1/2 tsp
Coriander masala - 1 tsp
Garam masala - 1/2 tsp
Curd - 1/2 cup
Water - 3/4 th cup
Kasuri methi - 1 tbsp
Eggs - 6
Coriander Leaves - For Garnishing
METHOD OF PREPARATION:
( For Fried Eggs )-
▫️Add oil in pan , Add Boiled Eggs , 1/2 tsp salt, pinch of turmeric, 1/2 tsp chilli powder .
▫️Fry Until Eggs Turn golden
▫️Keep a kadai and Heat the oil
▫️Add Whole spices and saute
▫️Add Grinded Green paste and cook until Oil Releases
▫️Once oil is released add salt, Turmeric, Coriander Masala , Garam masala and mix well
▫️ Lower the flame and add curd and give it a good mix .
▫️Cook it for another 2 minutes
▫️Add water and mix it
▫️Add Fried Eggs , kasuri methi and mix it
▫️Close Lid and cook for 5 minutes
▫️At last add chopped coriander Leaves
