Kaju Katli Filling
2 cups kaju ( blitz)
1 tbsp Rava
1/4 cup Khaskhas
1 cup Mava / khoya
1 cup raw sugar
¼ cup almond milk
1 tsp Cardamom powder
Dough
1 cup maida / tapioca flour
½ cup rava
1/4 - ½ cup milk
1/2- 3/4 cup ghee
Method
BLITZ - the kaju into a fine powder for the filling
ROAST - khaskhas and rava in ghee. Add the cashew powder and other filling ingredients and set aside to cool
KNEAD - the dough together until soft. Set aside for 10- 15 mins. Don’t put all the milk if it’s too wet!
ROLL & SHAPE - take a small dough ball, flatten it out like a chapati, fill it with the kaju filling, cover it and roll out again. Make small circles.
SHALLOW FRY - in a pan , add ghee, let it heat and slowly slide your satoriya in. Cook until golden brown
Serve hot with tup!
