Easy VEGAN “SAUSAGE” LASAGNA #shorts #vegan #recipes

Ingredients :
• lasagna noodles
• 1 package @beyondmeat hot Italian sausage
• tofu ricotta, I follow @sweetsimplevegan recipe!
• 1 package @violife_foods vegan mozzarella
• 4 c. favorite tomato sauce
• 1 tbsp. ground flax seed + 2 1/2 tbsp. water
• vegan grated cheese to top (optional)

Instructions :
Preheat oven to 415 F
1.) Cook noodles according to package instructions. I cook mine until they are al dente (slightly undercooked) so they won’t become too mushy in the oven. I also strain and rinse my noodles under cold water to stop them from further cooking.
2.) Cook + crumble the Beyond sausage in a pan on medium high heat. Add to a paper towel lined bowl to soak up the extra oils.
3.) To a small cup add your ground flax and water, set aside to thicken. In the meantime prepare your tofu ricotta. Once finished, mix in the flax “egg” until combined.
4.) To a deep baking dish, add a layer of sauce to start. Then add a layer of noodles, tofu ricotta, Beyond sausage, and a generous sprinkle of vegan mozzarella. Spoon over some sauce and then repeat process until your pan is full or ingredients run out.
4.) Once you finish your final layer, add the last layer of lasagna noodles to cover. Then add the rest of your sauce as well as the vegan mozzarella. Add vegan grated cheese if desired. Cover with tin foil and place baking dish onto a sheet tray (this will prevent the bottom from burning).
5.) Bake covered for 35 minutes then bake uncovered and without the baking sheet for another 20-25 minutes or until your vegan cheese is melted and the edges of noodles start to brown.
6.) LET SET FOR AT LEAST 20 MINUTES! If you cut fresh lasagna you will have soup, not lasagna. 😅 Once set, cut and enjoy! 💚
