*Litti Chokha Recipe:*
*Ingredients:*
For Litti:
2 cups whole wheat flour
1/2 cup ghee
Water (as needed)
Salt (to taste)
For Filling:
1 cup sattu (roasted gram flour)
1 onion (finely chopped)
2 green chilies (finely chopped)
1 tablespoon ginger-garlic paste
1 teaspoon ajwain (carom seeds)
Salt (to taste)
Water (as needed)
For Chokha:
3 large eggplants (roasted and peeled)
2 tomatoes (chopped)
2 onions (chopped)
2 green chilies (chopped)
1 tablespoon mustard oil
Salt (to taste)
Fresh coriander leaves (for garnish)
*Instructions:*
1. *Prepare Litti Dough:*
Mix whole wheat flour, ghee, and salt.
Gradually add water to make a firm dough.
Cover and let it rest for 30 minutes.
2. *Prepare Filling:*
In a bowl, mix sattu, chopped onions, green chilies, ginger-garlic paste, ajwain, and salt.
Add water slowly to make a stuffing consistency.
3. *Make Litti:*
Divide the dough into small balls.
Roll each ball into a small disc.
Place a spoonful of filling in the center and seal the edges.
Bake the litti in a preheated oven at 180°C for 25-30 minutes or until golden brown.
4. *Prepare Chokha:*
Roast eggplants until the skin is charred. Peel and mash them.
Mix mashed eggplant with chopped tomatoes, onions, green chilies, mustard oil, and salt.
5. *Serve:*
Serve litti with chokha.
Garnish with fresh coriander leaves.
