For roasting the butternut squash
1½ pounds butternut squash peeled and diced
1 tablespoon extra virgin olive oil
¾ teaspoon salt + 2 twists of black pepper
For the salad
6 cups mixed salad greens
½ can (15-ounce) chickpeas drained and rinsed
1 green apple thinly sliced
⅓ cup pecans
¼ cup dried cranberries
½ cup feta cheese crumbled
For the dressing
4 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar
1 tablespoon mustard American or Dijon
1 tablespoon maple syrup or honey
1 teaspoon ground cumin
½ teaspoon salt
