Recipe:
Ingredients:
All Purpose Flour (Maida) - 1.5 Cups
Salt - A Pinch
Baking Powder - 1/4 Tbsp
Baking Soda - 1/8 Tbsp
Curd - 1/2 Cup
Oil - 1/2 Cup + For Greasing Parchment Paper Tray
Vanilla Essence - 1/4 Tbsp
Honey - 1 Tbsp
Water - 3 Tbsps + 2 Tbsps
Jam - 1 Tbsp
Dry Coconut Powder - 2 Tbsps
Preparation Method:
1. Preheat the kadai for 10 minutes on low-flame or oven to 180°C (350°F).
2. Grease a parchment paper-lined baking tray with oil.
3. In a mixing bowl, add of all-purpose flour(maida), a pinch of salt, baking powder, and baking soda.
4. Whisk everything together and add curd, oil, and vanilla essence and whisk until you get smooth batter.
5. Pour the batter into the prepared baking tray. Tap the tray lightly to remove any air bubbles.
6. Bake in the preheated kadai for 35-40 minutes on low-medium flame or in the preheated oven for 25-30 minutes.
7. Once baked, poke with a toothpick inserted into the center until it comes out clean. Remove the cake from the oven and let it cool in the tray for 10 minutes. Transfer the cake to a wire rack and let it cool completely.
8. In a small bowl, mix 1 tbsp honey with 3 tbsps warm water until well combined.
9. Once the cake is completely cooled, poke small holes all over the cake using a fork or a toothpick. Pour the honey-water mixture evenly over the cake, allowing it to soak in.
10. In a small saucepan, heat 1 tbsp jam with 2 tbsps water over low heat until the jam is melted and smooth. Spread the melted jam evenly over the top of the cake.
11. Sprinkle dry coconut powder evenly over the jam-coated cake. Let the cake sit for a few minutes to allow the jam and coconut to set.
12. Cut the cake into desired pieces.
