Full Recipe :
Ingredients:
1 cup rice (short-grain variety like Sona Masoori)
1 cup chana dal (Bengal gram)
1/4 cup moong dal (split yellow lentils)
Salt (to taste)
1/4 teaspoon turmeric
Water (as needed for soaking & grinding)
Instructions:
1. Soaking:
Wash and soak rice, chana dal, and moong dal together in water for 6-8 hours or overnight.
2. Grinding:
Drain the soaked ingredients and grind them into a smooth batter, using just enough water. The consistency should be thick yet pourable.
Add salt and turmeric, then mix well.
3. Fermentation:
Let the batter ferment in a warm place for 8-12 hours or overnight until slightly airy with a mild sour aroma.
Now, your Khatiya Dhokla batter is ready to use! Before steaming, you can add ginger-garlic-chili paste, fresh coriander, sweet corn (optional), Eno, and butter for extra flavor.
