This is one of my favorite noodles to pair with noodle soups. It has a similar texture to udon but a bit more chewy. It is often paired in a classic Laos soul called Khao Piak. These are so good if you haven’t tried it yet.

What you’ll need:
1 cup rice flour
1 cup tapioca starch
1 cup boiling water (if dough is too dry add 1 tbsp of hot water at a time to get the consistency of play dough)
Pinch of salt
Pro tip: always dust your rolling pin and surface you’re working on with rice flour to prevent sticking.
