Ingredients
4-5 chicken leg quarters/ drum sticks
Salt and black pepper to taste
3 chile anchos
12 New Mexico, California or chile Guajillo
1 Roma tomato
2 chipotles in adobo
2 garlic cloves
1/4 onion
3 bay leaves
4 cloves
2 tsp oregano
1/2 tsp cumin seeds
1/4 tsp ground ginger
2 tbsp ACV
3 1/2 cups water
1.5 lbs baby potatoes
2 avocado leaves or use bay leaves
