Lotus Root with Peanut Soup (莲藕花生汤) is a classic Chinese soup—it's umami, nutty, savoury and sweet. It's also warm, comforting, and packed with nutrients. It’s commonly found in Chinese restaurants that serve soups, but it’s so easy to make at home! There are many variations of this soup, and the version I’m sharing is as close as possible to the flavours you find at the restaurant in Malaysia.
