🍗 Masaledar Chicken Biryani (Khatri Style)

🧂 Ingredients:

Chicken Mix Boti – 750g

Sella Chawal – 750g (50% boiled with salt & whole spices)

Dahi (Yogurt) – ¾ cup

Tamatar (Tomatoes) – 4 medium (sliced)

Pyaz (Onion) – 2 large (fried)

Adrak-Lehsan Paste – 1 tbsp each

Lal Mirch Powder – 1 tsp

Haldi Powder – 1 tsp

Sabut Dhania (Coriander Seeds) – 1 tsp (crushed)

Jaifil & Javitri Powder – ¼ tsp each

Garam Masala – Darchini, Elaichi, Laung, Badi Elaichi, Badiyan ka Phool, Kali Mirch

Hari Mirch Paste – 1½ tbsp

Podina & Hara Dhania – Handful (chopped)

Aloo Bukhara – 6-7

Sukhi Imli – ¼ cup

Kari Patta – 10-12

Zarda ka Rang – ½ tsp (mixed in 1-2 tbsp water)

Ghee – As required


🍳 Tayari ka Tareeqa:

1. Chicken Masala:
Ek pan mein ghee garam karke adrak-lehsan paste, tamatar, dahi, sabut dhania, jaifil, javitri, haldi, lal mirch powder, garam masale, hari mirch paste, podina, hara dhania aur chicken mix boti daal kar achhi tarah bhun lein. Pani daal kar dhak kar 10-12 minutes tak paka lein jab tak gravy thick ho jaye.


2. Layering:
Ek degchi mein tayar chicken masala ki layer bichhaayein. Upar se fried pyaz, aloo bukhara, sukhi imli, podina, hara dhania, kari patta aur zarda ka rang daal kar chawal ki layer se dhak dein.


3. Dum:
Upar se melted ghee daal kar degchi ko dhak kar halki aanch par 12-15 minutes tak dum par rakh dein.


4. Serve:
Garma garam masaledar chicken biryani ko raita aur salad ke saath serve karein.
