Ragi Upma

Recipe:
Ingredients:
Ragi Flour - 1 Cup
Bombay Rava (Semolina/Suji) - 1/2 Cup
Oil - 1 Tbsp
Mustard Seeds - 1/2 Tbsp
Cumin Seeds - 1/2 Tbsp
Urad Dal - 1/2 Tbsp
Chana Dal - 1/2 Tbsp
Cashews - 2 Tbsps
Green Chillies - 5-6 Slit
Curry Leaves - 2 Tbsps
Onion - 1 Finely Chopped
Carrot - 1/2 Finely Chopped
Beans - 2 Tbsps Finely Chopped
Green Peas - 1/4 Cup
Tomato - 1 Roughly Chopped
Salt - As Per Taste
Boiling Water - 5 Cups
Coriander Leaves - 2 Tbsps Finely Chopped
Coconut - 2 Tbsps Grated

Preparation Method:
1. Heat oil in a pan. Add mustard seeds and let them splutter.
2. Add cumin seeds, urad dal, and chana dal. Sauté until the dals turn golden brown.
3. Then add cashews and fry until they are lightly golden.
4. Add slit green chillies and curry leaves. Sauté for a minute.
5. Now add finely chopped onion and sauté until it turns translucent.
Add chopped carrot, beans, green peas, and cook for a few minutes until the vegetables are tender.
6. Then add roughly chopped tomatoes and fry until the tomatoes are cooked and become lightly mushy.
7. Add Bombay rava(semolina/suji)and roast until it emits a pleasant aroma.
8. Now add ragi flour and roast lightly for a couple of minutes.
9. Add salt and mix well.
10. Pour in the boiling water gradually while continuously stirring to avoid lumps.
11. Cook on medium-heat, stirring frequently, until the mixture thickens and the water is absorbed.
12. Turn off the heat, add in the ghee and cover the pan. Let it sit for a few minutes.
13. Mix well and garnish with finely chopped coriander leaves and grated coconut before serving.
