MCGRIDDLE MUFFINS: (Makes 18)
2 1/4 cups pancake mix
1 1/3 cup water
1 pk bacon, cooked (or 1 lb ground sausage, cooked)
1 cup shredded cheese
4 eggs, scrambled
1/2 cup syrup
salt and pepper to taste

Preheat oven to 400F. Cook your bacon and chop up. Scramble your eggs, but leave them just a tad undercooked. To a bowl, add the pancake mix, water, syrup and salt and pepper. Mix well. Add in the cheese, bacon and scrambled eggs. Mix well. Pour into well greased muffin pans using a 1/4 cup measuring cup. Bake for 15-18 minutes. Serve with extra syrup. Store in a container or freezer bag the fridge and reheat in microwave.
