Recipe:
Ingredients:
Rice Flour - 2 Cups
Gram Flour (Besan) - 1/2 Cup
Roasted Bengal Gram - 1/2 Cup Powdered
Cumin Seeds - 1/2 Tbsp
Salt - As Per Taste
Butter - 1.5 Tbsps
Water - As Required
Oil - For Deep Frying
Curry Leaves - 2 Stems
Preparation Method:
1. Combine rice flour, gram flour(besan), powdered roasted Bengal gram, cumin seeds, and salt to taste in a mixing bowl.
2. Add butter to the dry ingredients mixture. Rub the butter into the flour mixture until it resembles breadcrumbs.
3. Gradually add water, a little at a time, and knead to form a smooth and firm dough.
4. Heat oil for deep frying in a pan or kadai over medium heat.
5. Take a portion of the dough and fill it into an oil-greased muruku maker or chakli press with a star-shaped disc.
6. Press the dough directly into the hot oil in to form muruku shapes. Fry in batches, avoiding overcrowding. Fry the muruku until light golden-brown and crispy. Remove using a slotted spoon and drain excess oil.
7. Fry the curry leaves in the hot oil until crisp and aromatic and add on top of Butter Muruks. Allow the muruku and curry leaves to cool completely before storing them in an airtight container.
Serve and enjoy as a crispy snack with tea or coffee!
