For mozzarella cheese, you need to use unpasteurized or low pastured raw milk. If the milk is too hot the cheese will turn into paneer. To make goat's cheese, use goat's milk.
Use full-fat milk for cream cheese and paneer. The process of making cream cheese and paneer ( cottage cheese ) is the same. If you want the cream cheese to be more creamy then add in fresh cream along with milk to make your cream cheese.
For homemade butter you will need heavy cream or fresh cream, I used 40% medium-fat fresh cream.
Shelf Life - Keep everything for 7 days in the fridge or in the freezer for a month.
