Detailed Recipe :
Ingredients:
80–100g tamarind (Imli)
7–8 dates (Khajur), chopped
3 dry red chilies, broken
1 bay leaf
1 clove
1 cinnamon stick
1 star anise
1/2 tsp black pepper
3–4 cubes of jaggery (Gul)
Salt to taste
Chili powder to taste
Garam masala to taste
Coriander powder to taste
Water (as needed)
Instructions:
1. Soak the tamarind in hot water for 20 minutes.
2. Grind the tamarind to a smooth paste. Add water if needed to get the right consistency.
3. Filter the paste to remove any fibers.
4. Add the following spices to the tamarind paste: salt, chili powder, garam masala, and coriander powder.
5. Add the dates, dried red chilies, bay leaf, clove, cinnamon stick, star anise, and black pepper to the tamarind paste.
6. Add jaggery cubes and stir well.
7. Bring the mixture to a boil. Let it simmer for a few minutes. It will thicken as it cooks.
8. Once it thickens, turn off the heat and let it cool.
9. Store in a jar and keep it refrigerated.
