Vegan Plum Armatto Ice Cream #shorts #vegan #recipes

21oz (600g) plums, quartered and de-stoned
2 Tbsp sugar (25g)

Ice Cream:
1/2 cup (75g) cashews, soaked 6-8 hrs
1 can (15oz/400ml) coconut milk, full fat
1/4 cup (60g) maple syrup
2 Tbsp (30ml) amaretto
1/2 tsp ground cardamom
pinch of salt

1. Preheat the oven to 200°C/400°F and line a baking tray.
2. Add the plums and sugar to a bowl and use your hands to toss them, then place on the baking tray and roast for 30 minutes to release the juices.
3. Remove from the tray and let cool down completely.
4. Add the plums together with the remaining ingredients to a high-speed blender and mix until completely smooth.
5. Taste the mixture and add more sweetener if needed. Transfer to a bowl and place in the fridge to chill for 1 hour, then transfer to your ice cream machine and follow the instructions until you have reached a thick consistency.
6. Transfer to a freezer safe container and freeze for another hour before serving.
